About Chef Kristi Rimkus:
Kristi Rimkus started cooking low calorie meals more than 15 years ago, when she was inspired to lose weight and improve her health. After dieting and daily exercise, she became inspired to learn about health and nutrition, returning to school to obtain a certification in nutrition and wellness from The American College of Healthcare Sciences.
